Description
The Gueuze Tilquin à l’ancienne is a spontaneous fermentation beer assembled from lambics of 1, 2 and 3 years old. Unfiltered and unpasteurised, it is refermented in bottle for a period of at least 6 months. The lambics used have been fermented and matured in oak barrels. They come from must brewed by Boon, Lindemans, Girardin and Cantillon. Its taste is acidic and dry but presents a certain roundness. It also has a slight dry bitterness due to the young age of the oak barrels used, these still releasing some tannins. The nose is lemony and fresh.
